Kangkong or water spinach is a tropical plant that is a popular vegetable in the Philippines.
The word Kangkong means swamp cabbage or river spinach in English. But those names does not reflect what kangkong really is except that it grows well with a lot of water.
Kangkong is a humble vegetable that commonly accompanies meat and rice
dishes.
Kangkong adobo is a traditional recipe in the Philippines that incorporates
coconut milk, vinegar, sugar, garlic, and bay leaves to make an adobo
sauce and mixed into the sautéed Kangkong leaves.
Kangkong leaves are valued for its nutritional content.It is a good source of iron and calcium and also contains
magnesium, phosphorous. It grows easily and is available year-round.
